My first real experience of foundations came when I had a serious problem with damp penetrating the corner of my house at the time which was a stone cottage built into the side of a hill. I decided that I would dig down and expose the corner then build a retaining wall a couple of feet out so that the air could circulate.
So I started digging and after I had got down a few feet it gradually dawned on me that there were no foundations and that the wall was literally just big stones resting on soil. And that if I did not stop digging, I could cause some serious damage. So, I flooded the hole with concrete and stopped worrying about the damp.
So bear that in mind - many old building do not have any foundations and if you start messing you may turn a minor problem into a major problem.
If you are going to do anything significant with foundations, you need a structural engineer to advise you (see above)
